1. Magical Muffin Tips:

“Don’t overmix your batter.

Use a spring-loaded scoop to fill the muffin tins – be precise!

Bake your muffins in a greased muffin tin or with paper liners to ensure your muffins come out in one piece.

Don’t over bake your muffins. Bake them just until a tester comes out clean, or until you can press the muffin and it springs back.”
 

2. Figure 8 And Overbake For Perfect Macarons

“The figure 8 test is a great way to check your batter’s consistency; pick up the batter with your spatula and let it flow down into the bowl while drawing the figure “8”. If it can do that without the batter breaking, immediately stop folding.

It’s always better to over- rather than under-bake your macarons as the maturation process can typically salvage ones that are over-baked.”
 

3. The Perfect Bake For Your Cheesecake: 

“Use room temperature cream cheese. A quick way to get room temperature cream cheese: remove cream cheese from the packaging and microwave in bursts of 15-20 seconds until it reaches room temperature (it should not be melted or softened at all.) It’s also important to use room temperature eggs and sour cream.

Don’t overmix your batter! Overmixing will incorporate too much air into the mixture, causing the cheesecake to rise too quickly in the oven and then fall (causing cracks). Mix until the lumps are gone and the ingredients are just combined. Mix at low and consistent speeds to prevent mixing in too much air.

Allow the cheesecake to cool at room temperature before putting it in the fridge to chill.”
